I used SuperDuper -> https://www.shirt-pocket.com/SuperDuper ... ption.html ages ago, but tried a full backup with my running MAMP Pro sites (MySQL + Apache) and it successfully backed up my entire system AND restored my system perfectly. MySQL was always running and my DB and sites were getting updates. I've done this 6 times now so safe to say I will be using SuperDuper over macOS Time Machine.
In addition, you can create schedule with SuperDuper, so this works much better for me whereas Time Machine keeps writing in real-time to the drive and updates.
