You've probably already done this, but in my MAMP 6.x I have PHP folders in two spots:
- /MacintoshHD/Applications/MAMP/conf/
- /MacintoshHD/Applications/MAMP/bin/php/
Only the versions of PHP folders that appear in the /MacintoshHD/Applications/MAMP/bin/php/ directory appear in the version ...

Perhaps this is a permissions issue. Just as a test, what happens if you put your document root in the Applications/MAMP folder?

Did you get MAMP 7 or MAMP Pro 7? If you have MAMP Pro there's a chance the MAMP tech support people will help you.

Back on June 18th, MAMP tech support (and I use that term generously) said "as we are at the final stage of MAMP PRO 7 release."
